Master Chefs 2022 at Lækjarskóli
Year 10 pupils at Lækjarskóli worked on an ambitious final project in December, where they created their own dishes and served them to the school's management and caretaker. Mexican low-carb wraps were the chosen dish, and the winning recipe can be found below (recipe for two).
Year 10 pupils at Lækjarskóli worked on an ambitious final project in December, where they created their own dishes and served them to the school's management and caretaker. The students were divided into smaller groups and chose their own dishes to cook, which were diverse in nature. The cooking ranged from Greek and Mexican to Italian. It is clear that the young people possess great culinary skills and showed great enthusiasm for this project this winter. The dishes were all beautiful and extremely tasty, and the judging panel had the utmost difficulty choosing the best ones. The competition was the first of its kind at Lækjarskóli and certainly not the last, as it was simply so much fun! A Mexican low-carb wrap was the chosen winner, and the winning recipe can be found below (recipe for two).
Mexican low-carb wraps
- 1 chicken breast
- 1 tsp paprika
- 1 tsp garlic seasoning
- Chilli flakes
- ½ Basil
- ½ tsp Thyme
- Salt and pepper
- Small tortilla
- ½ red onion
- ½ red pepper
- ½ green pepper
- ½ tin of chopped tomatoes
- 100 g grated cheese
- 2 limes
- Coriander to taste
- ½ dl water
Method
- Mix the spices with 2 tbsp of oil and marinate the chicken.
- Chop the vegetables into rough pieces and season lightly.
- Fry the chicken for a few minutes in a pan, then place it in an ovenproof dish and bake in a preheated oven at 180°C fan for 25 minutes.
- When the chicken is ready, it is taken out of the oven and shredded.
- Add the chicken to the vegetables along with the chopped tomatoes and water in the pan and fry for a good while.
- Heat the tortilla on a pan, then add the chicken and vegetable mixture to one half of the tortilla, sprinkle grated cheese over it and fold the tortilla over.
- Served with coriander and lime
