I'm really looking forward to Christmas this year because my family and I will get to experience it for the first time with my daughter, Glóeyja. Children possess such beautiful sincerity and a pure love that we tend to forget as we get older.“
Christmas walk with the family is essential
Rakel says that in Hafnarfjörður, you don't have to look far to get into the Christmas spirit; for example, it's essential to go on a Christmas walk with the family around the town and enjoy what's on offer. „On Christmas Eve, it's a tradition for our extended family to cook turkey. The sweet potato mash with the cornflake caramel crunch is an absolute favourite of mine and my cousins. So, we usually make an extra dish of it to have leftovers the next day.“
Sweet potato mousse with cornflake caramel curls
For 6-8
- 4 sweet potatoes
- 100 g sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 100 g butter, melted
- 1 1/2 tsp vanilla drops
- Cornflakes caramel
- 3 tbsp butter
- 50 g icing sugar
- 1 1/2 cups of cornflakes, crushed
Melt the butter and add the icing sugar. Then add the cornflakes and stir well.
Instructions
Prick the potatoes with a fork. Place in a hot oven at 180°C for about an hour, or until they are tender. Cut them in half and scoop out the flesh. All the ingredients for the mashed potatoes are mixed together well. Place in a baking dish and bake for 20 minutes, then remove. Make the cornflake crumble and sprinkle it over the mashed potato. Return to the oven for another 20 minutes.
